Citrus Margaritas
Last week at our “tea,” we served these Citrus Margaritas. We offered hot tea and iced tea and “virgin” margaritas, but everyone (except Kendall) chose a regular margarita. They were really good and very refreshing on a hot summer day.
First you will need to get out your ingredients: oranges, lemons, limes, sugar and tequila. To make 2 margaritas, peel one orange, one lemon and one lime and cut in half. Add them to your VitaMix (or strong blender). Fill a measuring cut with ice and then add water. Pour 1-cup of ice/water into the blender over the fruit. Add 3 tablespoons of sugar and 1 tablespoon of tequila. Blend the ingredients until smooth. Pour into sugar rimmed margarita glasses and serve.
My granddaughter was very adept at rimming the margarita glasses with sugar. She poured sugar into a small plate, ran a quartered lime around the rim and then dipped the rim of the glass into the sugar.
A wonderful fresh drink to serve on a warm day.

INGREDIENTS
· 1 cup ice water (fill cup with ice and then add water)
· 1 orange, peeled and cut in half
· 1 lemon, peeled and cut in half
· 1 lime, peeled and cut in half
· 3 tablespoons sugar
· 1 tablespoon tequila (optional)
· 1 lime, quartered, for rimming glasses
INSTRUCTIONS
1. Put all ingredients into a VitaMix (or strong blender) and blend until smooth.
2. Rim the margarita glasses by running the quartered lime around the rim and then dipping the rim of glass into a small plate of sugar.
3. Pour blended ingredients into glasses.
4. Serve immediately.
NOTES
An easy way to peel the citrus fruit is to cut the top and bottom off and then use your butcher knife to slice down the fruit (from top to bottom) taking the peel off in strips.
