Miso Soup

My granddaughters stayed with me again last week and one day we fixed an Asian lunch of Sushi and Miso Soup.  We all loved it!  Stevie texted me yesterday and wanted me to send her the recipe for the Miso Soup as she thinks it is something she can make for herself during these summer months.

First you will get out your ingredients which include ginger, miso, tofu, spinach, green onion and vegetable broth.  Miso can be found at an Asian market or on Amazon.  Most large supermarkets carry extra firm tofu and fresh ginger.  Grating up fresh ginger does add a sparkle, but this ginger paste is handy to keep in your refrigerator.

Next, measure out your ingredients.

A dab of ginger, 2 tsp. miso, 1/2 c firm tofu, handful of fresh spinach, 2-3 green onions, 1 c vegetable broth. Put ingredients in cup, pour broth on top, and microwave in cup with steam valve open for 2 minutes.

I found a cute cup on a display in the grocery section of Walmart.  I’m sure there are other microwaveable mugs you can use, if you don’t find this one.

Recipe:

Serves: 1 cup

INGREDIENTS

  • A dab of ginger

  • 2 teaspoons red miso

  • ½ cup firm tofu - drained and cut into small cubes

  • A handful of fresh spinach

  • 2-3 green onions, chopped

  • 1 cup vegetable broth

INSTRUCTIONS

  1. Put the ingredients into your cup in this order: ginger, miso, tofu, spinach and green onion. Pour the broth over the top. Add top of cup (if using) and open the steam valve.

  2. Slide cup into microwave (make sure it is not too tall for your microwave) and cook on high for 2 minutes. Carefully remove from microwave, take the lid off and stir.
