Blackberry Cobbler

Summer blackberries… yum, yum.  I have found them at the local farmer’s market and at my grocery story recently.

To make a delicious, simple dessert, mix up a blackberry cobbler.

Preheat oven to 375 degrees.  Wash berries then mix with sugar and lemon juice.  Set aside while you make the “crust.”

You’ll need almond flour (or crushed almonds), old fashioned oats, sliced almonds and baking powder.  Pour these dry ingredients into a mixing bowl and squeeze and mix together with your hands.

Pour the sugared berries into a 9-inch pie pan and spread into a single layer.  Crumble the crust ingredients over the top of the berries.  Bake in preheated oven for 30 minutes until bubbly.  To brown the crust, place under the broiler for about one minute.  Watch carefully as it can burn quickly. Let cool about 30 minutes before dishing up.

INGREDIENTS

  • 12-oz. fresh blackberries (about 2 cups - washed and strained)

  • ⅓ cup sugar

  • 1 teaspoon cornstarch

  • Lemon juice from ½ fresh lemon

  • Pinch of salt

  • ¼ cup almond flour (or crushed almonds)

  • ¼ cup oats (Old Fashioned Oatmeal)

  • ¼ cup sliced almonds

  • ½ teaspoon baking powder

INSTRUCTIONS

  1. Preheat oven to 375 degrees.

  2. Mix berries with sugar, cornstarch and lemon juice and set aside while you mix the topping.

  3. Mix together flour, oats, almonds and baking powder.

  4. Pour berries into a 9-inch pie pan and spread into a single layer. Crumble topping over the berries.

  5. Bake about 30 minutes, until bubbly. To brown the top, place under the broiler for about a minute, watching carefully.

Enjoy that warm, healthy, delicious pie!
