A Healthy Burger
Here's a recipe for an easy-to-fix "hamburger" (bean burger) that actually tastes good!
INGREDIENTS:
• 1 15-ounce can pinto beans, drained and rinsed
• 1 8-ounce can tomato sauce
• 1 large garlic clove, peeled and minced
• 1 tsp. onion powder
• 2 green onions
• 1 cup cilantro leaves
• 2 cups old fashioned oats
• Mustard
• Onion slices
• Tomato slices
• Lettuce, mixed greens or swiss chard
• Dill pickle slices
• Jalepeño slices
• Whole wheat buns or bread slices
DIRECTIONS:
• Heat oven to 400 degrees.
• Put beans, tomato sauce, garlic, onion powder, green onions, cilantro and carrots in a food processor and mix until blended.
• Add blended mixture to oats and stir by hand.
• Form into patties, put on a baking sheet, and bake for 8 minutes.
• Turn patties over and turn oven to Broil and cook 2 minutes longer.
• Turn patties over once again and Broil another minute.
• Serve on whole grain, no-fat burger buns or bread.
• Garnish with mustard, catsup, onion slices, tomato slices, lettuce, and pickles.
• Makes 8 patties
